Birthday Cake Energy Bites (No Bake)

These 4 ingredient no bake birthday cake energy bites taste like a cross between a birthday cake and cookie dough.

Birthdays are a big deal in my family. These make the perfect snack leading up to someone’s big day. Birthday or not, they will satisfy your sweet tooth and are so fun for kids to make.

Kids can help measure the ingredients, press the food processor button, and roll the dough into balls. Kids love any excuse for sprinkles. Getting kids involved in the kitchen can increase their exposure to different foods and their likelihood to be more adventurous with foods.

Ingredients for Birthday Cake Energy Bites

With simple and nutritious ingredients it can make a quick snack or fun option to put on lunch or supper plates.

Oats: I use quick rolled oats, but any brand will do. It gets pulsed into a flour so you can even opt for oat flour in this recipe. Oats are a great fibre addition to snacks.

Cashews: Use unsalted cashews which add some healthy fats, protein and fibre to the snack.

Honey: I use honey to sweeten these energy bites, although maple syrup would also work. Using natural sugars often add more flavour so we can use slightly less than processed sugars.

Almond Extract: Almond extract adds the perfect birthday cake flavour. If you don’t have it you can also use vanilla extract.

Sprinkles: The sprinkles are just for fun, so if you don’t have kids you can skip it. I like to use these sprinkles which are naturally coloured without artificial colouring.

These 4 ingredient no bake bites taste like a cross between a birthday cake and cookie dough. They make the perfect snack or dessert.
Servings 15 balls

Ingredients
  

  • 1 cup quick rolled oats
  • 1 cup cashews, unsalted
  • 1/4 cup honey
  • 1/2 tsp almond extract
  • 1 tbsp sprinkles

Instructions
 

  • In a food processor, blitz the oats until they form a flour consistency.
  • Add the cashews into the food processor, and continue to pulse until cashews are blended.
  • Add in the honey and almond extract and process for a couple of minutes until a dough starts to form.
  • Place the dough mixture in a bowl, add the sprinkles. Mix together well with your hands.
  • Roll the dough into bite sized balls and refrigerate.
